Preparation

The first step should be to prepare the ingredients for roasting.

Cut the cauliflower

Cut the Cauliflower into small florets. Cut florets are easy to clean, and you can be sure that every corner of the florets is clean. Wash them and let them dry, or dry them with a paper towel.

Place in a baking tray

Rub some oil in the tray and arrange the florets in the tray. Add olive oil, cumin powder, paprika, and turmeric to the florets. Mix well so that spices are coated on the florets.

Roasted Cauliflower Hummus Bowls

Preheat the oven

Preheat the oven to 400°F for 10-15 minutes. Place the tray in the oven and bake for 40-45 minutes in the middle rack. You want nicely roasted cauliflower. Check if your cauliflower is roasted or if you want them to be more crispy, bake for 15 more minutes.

Hummus

You can use store-bought or homemade hummus for this recipe.

Other ingredients

Cut cucumber, radish, cabbage, and tomatoes in the size you want. Slice the cabbage according to your liking. If you don’t have any ingredients, you can always add the ones you have.

Greens and salads are excellent sources of minerals and vitamins. You can use ad greens and raw veggies of your choice. I had onions, cucumbers and radishes available at home. So I am adding these veggies.

Be creative with your bowls and make them as colorful as you want.

You can eat these goodies hot or cold, They satisfy both ways.

Ingredients:

1 large cauliflower head broken into smaller florets
1 teaspoon curry powder
½ teaspoon ground cumin
½ teaspoon smoked paprika
2 Tablespoon olive oil

Sea salt and black pepper, to taste
2 cups hummus (homemade or store-bought)
2 cups red cabbage, thinly sliced
1 medium cucumber, thinly sliced
2 radishes, thinly sliced
½ c. pickled red onions (or fresh red onion)
1 cup fresh parsley, chopped
Pita bread or crackers for serving

Directions:

  1. Preheat the oven to 400°F.
  2. In a baking tray, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt, and black pepper to taste. Mix all the ingredients to coat the florets.
  3. Place in the oven to roast until fork-tender and crispy around the edges, 40-45 minutes.
  4. Remove from oven and let to cool. In the meantime, start preparing the bowls.
  5. Place a large dollop of hummus on the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
  6. Garnish with fresh parsley. Serve with pita bread for dipping. Enjoy.

I find these bowls to be satisfying as well as healthy. You can reduce the amount of salt or oil as per your choice. Some people like me try to eat less salt due to health issues. You can always tweak it here and there to suit the recipes to your taste.
