Roasted cauliflower hummus bowls

- 1 Piece Cauliflower head broken into smaller florets
- 1 tsp Curry powder
- 1/2 tsp Ground cummin
- 1/2 tsp Smoked paprika
- 2 tbsp Olive oil
- 2 Cups Hummus
- 2 Cups Red Cabbage, thinly slices
- 1 medium cucumber, thinly sliced
- 2 radishes thinly sliced
- 1/2 cups red onions picked or fresh
- 1 cup Fresh aparsle choppedy
- Pita bread or crackers for serving
- Preheat the oven to 400°F.
- In a baking tray, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt, and black pepper to taste. Mix all the ingredients to coat the florets.
- Place in the oven to roast until fork-tender and crispy around the edges, 40-45 minutes.
- Remove from oven and let to cool. In the meantime, start preparing the bowls.
- Place a large dollop of hummus on the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
- Garnish with fresh parsley. Serve with pita bread for dipping. Enjoy.
