One Pot Cauliflower Potato Curry

Ingredients
  

  • 1 Medium Cauliflower
  • 1 Medium Potato
  • 1 Medium Onion
  • 1/2 inch Ginger chopped finely
  • 3 cloves Garlic chopped Finely
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric
  • 2 tbsp Olive oil
  • Salt to Taste
  • Water is needed

Notes

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onion and sauté until it turns golden brown.
  3. Add ginger and garlic and sauté for 3-4 minutes.
  4. Add coriander powder, turmeric powder, and chopped green chili. Mix well and cook for a minute.
  5. Add cubed potatoes and mix well.
  6. Cover the pan and let the Potatoes cook on medium-low heat for 7-8 minutes or until soft and cooked through.
  7. Add the cauliflower florets before the potatoes are done, cover the pan with a lid, and cook for 3-5 minutes.
  8. When the vegetables are properly cooked, turn off the heat and let the curry sit for a few minutes before serving.
